Super fresh Italian cheese made from pasteurised cows' milk. The outer shell is mozzarella stretched to form a ball. This is filled with stracciatella, (meaning "little rags"), a mixture of fresh cream and shredded mozzarella. Originally from the Puglia region, this rich flavoured cheese has a short shelf life.
