Made using sheep milk. The maturation process follows and ancient tradition used by farmers who need to keep the cheese all year.
Il Forteto puts its Pecorino in tufa's caves (limestone). In these grottos, the cheese is laid in canvas sacks from mid-August until November during which the Pecorino gets is spicy flavour and its unique aroma.
