This superior coppa is produced using only top quality Italian pork adhering to the strict PDO (Protected Designation of Origin) process including the dry-salting of well trimmed pork with a mixture of salt and spices for 15 days after which it is then matured.
It has a firm texture.
The slices are red, interspersed with pinkish white. Sweet and characteristic aroma. Delicate taste that is refined with the progress of maturation.
