It is a pasta shape typical of the Puglia region in southern Italy. Its name comes from its concave shape, which resembles a small ear or "orecchia".
Orecchiette are prepared only with the best durum wheat and water. Their texture can enhance the flavours of any sauce.
Suitable for a vegetarian diet.
