Spinach lasagne (lasagne verdi) are dried sheet of rectangular pasta used to make lasagna. They are prepared with durum wheat semolina, free-range egg and spinach, from which they take their green colour. They appear porous and rough, perfect to retain the sauce and enhance the lasagna's flavour.
