After at least four months seasoning, the best cheeses are washed, dried and soaked for more than a month in a mix of Tuscan's wines and stored in local terracotta jars called Orcio. When the cheese is ready the paste is softer, sweeter and obtains a delicate flavour and the unmistakable aroma of wine, without losing its distinct pecorino flavour.
