A table cheese made from 100% sheep milk. It has a smooth rind, hard and compact, scattered eyes, and a white colour. It is softer and spicy in the early months, but becomes more distinct and spicier as it ages. Aged at least 120 days. Best paired with a full-bodied red wine.
