This whole cow's milk has been aged from 12 to 14 months. It has a distinctive aftertaste of fermenting fruit.
Cheese wheels are dipped into Raboso wine. Ubriaco means “drunk” and this cheese is typical of the province of Treviso, in the Veneto region.
It is made every year around the middle of September, when the grape musts are fermenting in the cellars.
