To prepare Bresaola selected Italian beef is rubbed thoroughly to encourage the absorption of salt, pepper, and wild fennel. The meat is dried, and after a short maturation period, the bresaola is ready to be served with oil, pepper, lemon, and shaves of seasoned cheese.
