This product has a remote origin and is somewhat unknown. The process begins with meat from Italian beef that has been well-trimmed to give it a rounded form. At this point, the meat is carefully massaged to absorb the salt and pepper scents that are part of the tanning process. After drying and seasoning, the bresaola is ready to be served with a little dressing of oil, pepper, lemon, or flakes of Pecorino cheese.
