It's a little sausage from the lowlands of Parma. It is made from the same cut of meat as Culatello di Zibello PDO. After being salted and flavoured, it is delicately placed in a natural casing and tied. The thin and porous casing facilitates quick curing. It can be eaten while still tender, with Lambrusco wine.
