Prestigious sausage typical of Parma, still produced in an artisanal way.
For production only domestic and selected pork legs are used. It has a deep red colour, with the presence of fat on the external layer and between the muscle bundles. It has an intense aroma of cellar aging, soft and sweet taste like ham, mellow and sophisticated as the culatello.
